Quinoa Risotto Recipe


Quinoa Risotto

As the world’s most complete protein, quinoa contains all eight essential amino acids. Also called “the mother grain”, it is high in unsaturated fats and low in carbohydrates. Just like rice, it is very easy to cook and blends well with just about anything that’s thrown in with it. How does it taste? It’s been compared to couscous, with that mild, delicate taste. If you’re raring to try a new type of grain, go visit a deli or health-food store to grab some quinoa.

This Quinoa Risotto Recipe can serve 4. Preparation time is 15 to 20 minutes. Cooking time is 10 to 15 minutes.

Quinoa Risotto Recipe Ingredients
1/4 cup chopped spring onions
1 1/2 tablespoons finely chopped carrots
2 tablespoons finely chopped red bell pepper
2 tablespoons olive oil
1/2 cup quinoa
1 1/2 to 2 cups water
1/2 piece zucchini, cubed
1/4 cup whole corn kernels, rinsed
20 grams grated Parmesan cheese
salt and pepper to taste

Quinoa Risotto Recipe cooking procedure
1. Saute onions, carrots and red bell pepper in olive oil. Cook for 5 minutes.
2. Add quinoa and mix until well coated with vegetable juices.
3. Start pouring water and mix, continue adding until quinoa is cooked.
4. Add in zucchini, corn kernels, and Parmesan cheese.
5. Taste and season with salt and pepper.

Tips: Want to add quinoa to entrees, soups, and salads? Just boil quinoa with double the amount of water in this recipe for 12 minutes then let it steep for 10 minutes in the boiling water. Fluff and add!
