Oatmeal, Dried Mango, and Cashew Cookies Recipe makes about 24 cookies. Preparation time is about 30 minutes. Baking time is 8 to 10 minutes.
Oatmeal, Dried Mango, and Cashew Cookies Recipe ingredients:
1/2 cup butter, softened
3/4 cup sugar
1/4 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups quick – cooking oatmeal
1/2 cup dried mangoes, chopped into quarter-inch pieces
1/2 cup roasted cashew nuts, coarsely chopped

1. Preheat oven to 375F. In a large mixer bowl, beat butter, sugar, and brown sugar until light and fluffy. Add egg and vanilla: beat well.
2. Combine flour, baking soda, salt and cinnamon in a medium bowl. Add flour mixture at low speed. Stir in oatmeal, dried mangoes, and cashews.
3. Drop dough by heaping teaspoonfuls onto ungreased cookie sheets. Bake for 8 to 10 minutes, until edges are lightly browned. Cool on cookie sheet for 5 minutes; transfer cookies to cooling racks.
